Spinach tart

Looking for a nice and easy recipe for a Sunday dinner? Here is my favourite. This savory tart will make your belly happy :)


  • Tart pan 28 cm
  • Preparation time: 30 min + 50 min baking time
  • Servings: 4

Tips:

  • Use baking beans for baking the bottom. Alternatively, you can use rice. It will not be useful foor cooking afterwards, but it can serve you again for baking if you keep it.

INGREDIENTS


  • 1 package puff pastry
  • a bit of butter (for greasing)
  • 2 medium shallots
  • 3-4 tablespoons olive oil
  • 350 g spinach
  • 40 g Philadelphia cream cheese
  • 2 eggs
  • 200 g gorgonzola cheese
  • 5-6 dried tomatoes
  • 3-4 small tomatoes (for decoration)
  • salt and pepper

DIRECTIONS


1. Pre-heat the oven to 200˚C.

2. Chop the shallots.

3. Pre-heat the pan on medium-high heat. Pour in the olive oil and let it reach the temperature. 

4. Fry the shallots for 2 minutes. Then reduce the heat to medium. Then add the spinach.

5. Wait 6-7 minutes until the spinach will reduce its volume and become soft. 

6. Add the gorgonzola cheese. You can cut it to pieces so that it melts easier. Stir the mixture occasionally until the cheese is melted.

7. Add the cream cheese. 

8. Add pepper ( I prefer a lot) and a flat teaspoon of salt.

9. Reduce the heat to low-medium. Add the dried tomatoes and let the mixture simmer for a few minutes. Then turn off the heat and set aside to cool.

10. Prepare the pan. Grease it with butter. Then put the puff pastry in and cut to form. Press the sides with your fingers to ensure that the form is filled nicely. Pinch some holes in the botthom with a fork.

11. Put parchment paper on the puff pastry. Then put baking beans on the paper. It will prevent the bottom from rising too much. 

12. Bake the bottom for 15 minutes. 

13. Mix the eggs in a small bowl. Then pour it in a few steps into the pan with the spinach-cheese filling while mixing the filing gently with a spatula.

13. Take the bottom out of the oven. Remove the beans. Let the bottom cool for 5 minutes. Then pour the filling onto the bottom. Decorate with fresh tomato slices.

14. Bake for 35 minutes.
